Here’s the recipe I used for my test batches: in a sauce pan, sauté 1 tablespoon of minced garlic in a combination of 1 tablespoon of butter and 1 tablespoon of olive oil. Add 1 cup of wine along with salt, pepper, and Italian herbs to taste and gently reduce to a total volume of 1/3 over medium low heat. While the sauce is reducing, cook your desired pasta for 3 minutes less than the recommended time and drain. Once the wine is done reducing, you can thicken using cornstarch if desired, although I usually skipped this step. Keeping the sauce simmering, add the pasta and cook for an additional 3 minutes, stirring regularly to make sure that all the pasta is exposed to the sauce. Serve with desired add-inns and top with your cheese of choice.
